Papad khar is an ingredient in preparing any kind of papad. It contributes to the crispiness along with expansion of fried papad. When you add papad khar in the making of papad, the shelf life of papad increases to a longer duration. You will be able to get the mixture of papad khar at any grocery shop (online as well as offline). In scientific terms, it is called alkaline salt. It has to be stored in an air tight container to avoid it from getting spoilt. You can also add this mixture in a traditional dish called khichu to increases its shelf life too.
What is Papad Khar and What is it Made of?
Papad Khar is a chemical that is brown in color – dark as well as light brown colors. You can get it in cube form which is white in color but as you add it in the content, it turns brown in color. It is dissolved in water and then is added in the dough that is prepared to make papad.
It is amorphous to crystalline that is mined in form of lumps and then are broken down. The quality of the papad khar can be determined by poking a nail in the middle of the cube. If the nail easily penetrates in the cube then the quality of that papad khar isn’t good and you shouldn’t buy that.
Also, if you poke the nail and it is tough for the nail to penetrate, then too the quality isn’t good for the cube of papad khar. The best quality is when the penetration takes place smoothly with little effort. Also, even if the nail smoothly penetrates in the cube, but if there are black granules inside the cube, then it isn’t good to consume such product.
When you prepare dough for papad, you need to add this papad khar solution to knead the dough in place of plain water. To make papad khar solution, you need a cup of papad khar, 3/4th Cup of Salt and 10 Cups of water.
You just need to combine all the three ingredients and keep it on the stove to boil at medium heat. You must heat the mixture for around 15 minutes wherein you a little thicker solution. Then let the mixture cool down and let its sediments settle down at the bottom of the container. Now, you just need to separate the water from the top from the ingredients below.
Then, you simply can use this clear water in kneading the dough for papad. You can prepare more amounts of this solution and store the clear water in a clean bottle at room temperature for years.
